INGREDIENTS

1 lb Ground top round
¼ lb Bacon
1 Round onion
½ C celery, chopped
½ C Bell pepper, chopped
¼ tsp Ginger
2 tsp Red wine
½ tsp Sugar
1 tsp Powdered chicken bouillon
1 Bay leaf, crushed
Pinch paprika
1 tsp Chili powder
¼ tsp Oregano leaves
Pinch Cumin seed
1 tsp salt
Dash Worcestershire sauce
1 large can Tomato sauce
1 can Campbell's Cream of Mushroom Soup
1 large can Red kidney beans, drained


INSTRUCTIONS

  1. Brown the ground top round with onion.

  2. Add bacon. Then add the rest of the ingredients .

  3. Simmer for 30 minutes and service with rice (and mac salad if you have it).

NOTES

  • Serve with white rice and mac salad

  • Top with your favorite shredded cheese and finely diced sweet onions


About Zippy’s Chili Copy-Cat

Forget McDonalds, Burger King and Jack in the box. Zippy’s is THE FAST FOOD OF HAWAI’I. Their chili is famous in the islands and a staple at many beach picnics. For fundraisers in high school, we even sold tickets for people to purchase buckets of these things. When I left Hawaii, I really missed this chili! After trying many copy cat recipes that failed to replicate the flavors of Zippy’s chili, I took bits and pieces of different recipes and so far, this is the closest I’ve come.
